Being a mom is hard.❤️ And I am not just talking about changing diapers, running kids to practices, packing lunches kind of hard, although that chapter is definitely hard. I have four daughters. This is my oldest and my youngest. We don’t see our oldest as often anymore because she lives away and is on her own...and today she called to say she has been preapproved for a loan on a house. Big news. Huge. A milestone in her life.👊🏻👍🏻 And my baby? Today she got her first big girl job...before she even graduates 🎓 from college. And she is stoked. Like totally geeked. 🎉 And I don’t blame her. But that kind of stuff? It’s hard. I am so glad that I raised strong, independent young women with minds of their own who are ambitious and willing to work hard to achieve their goals. That’s what we want, right? But at the same time this chapter of my life...of being a mom...is so dang tough. But the tough...the hard...helps define us. It helps us to write our stories. And it is all a part of the journey. I am so dang proud of my girls. I am embracing the journey. Sometimes it’s easier to say “oh well- I’m fat, I might as well just eat the cupcakes” Or “oh well, I’m already fat and pregnant and will only get fatter- so I might as well eat what I want” - when we say this- we are giving ourselves permission to NOT CARE. The problem is- we DO care- And then- we feel sad and guilty about choices we make...about Weight we gain. About Activities we don’t participate in because we feel too bad about ourselves. My old self would use any stressor as an excuse- Almost any time in my entire life that I had a new stressor- my disordered relationship with food would be triggered. And it would make the stressor even worse than it really was. But can I tell you what this program has done for me? Yes. It’s helped me to lose weight. But more importantly- it’s helped me to learn to deal with my disordered eating. My poor coping skills.... I can actually be pregnant. During a pandemic- and NOT turn to food for comfort. I can still make healthy choices. And not feel bad about myself when I do choose a treat. I can gain some pregnancy weight and not let it turn into sabotage- where I eat and eat because I am so upset about gaining weight. It has helped me to focus more on HEALTH. And less on a NUMBER. And for this I am thankful. Seafood Mussels with Broccoli is a must try! 😍 ◾️ 👉 INGREDIENTS: 2 tbsp. olive oil 3 large shallots, chopped 5 cloves garlic, minced 1/2 c. dry white wine 1/2 tsp red pepper flakes (optional) Broccolini approx. 15 small to medium stalks chopped or 4 cups small broccoli florets 2 Tablespoons butter 2 tbsp. freshly chopped parsley, plus more for garnish kosher salt Freshly ground black pepper 2 lb. mussels, scrubbed and debearded Grilled or warmed bread ◾️ 👉 DIRECTIONS: In a large pot over medium-low heat, heat olive oil. Add shallots and a sprinkle of salt and cook until fragrant and soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add wine, red pepper flakes and 1/2 of the parsley and stir then simmer 10 mins. Add the butter and stir to incorporate. Taste and season with salt and pepper if needed Place the broccolinni/broccoli on top of sauce then pile in the mussels and put lid on top. Simmer until all the shells swing open, about 3-5 minutes shaking the pot a few times to shift them around (Discard any shells that aren’t open.)
